Here's the "recipe":
- One adorable husband and his favorite gas grill and wok. Our BBQ includes a gas burner, which makes things a lot easier for this recipe as you can cook the whole dinner at the same place.
- A few pieces of organic boneless skinless chicken breast (enough to feed everyone at the table).
- A quick home made marinade made of 1 lemon juice, 3-4 tbsp of olive oil, chopped parsley
- Any veggies you find in the fridge, in our case tonight: 1 eggplant, 3 bellpeppers (green and red), all chopped in cubes about the same size, and a minced garlic clove.
Pretty low key so far, right?It should have been no more than 5 minutes since you (or he) got started. And it doesn't get much more complicated...
* Marinate the chicken in the marinade for as long as you can. I think tonight that was barely 10 minutes, but still worth it.
* Heat a bit of olive oil in the wok, then add the cut veggies and let them cook, shaking once in a while. The wok is pure magic, you can't go wrong even if you have no idea how to cook. Add a bit of salt and pepper to taste.
* Meanwhile, cook the chicken on the BBQ until thoroughly cooked.
* Serve and enjoy!
